摘要:

黑水凤尾鸡是国家地理标志产品,而白羽肉鸡是目前市售最多的品种。该研究以市售白羽肉鸡和黑水凤尾鸡的鸡胸肉和鸡腿肉为研究对象,从营养成分氨基酸和矿物质元素两方面探讨二者之间的差异。结果表明:黑水凤尾鸡与市售白羽肉鸡均检测到17种氨基酸和15种矿物质元素。在氨基酸检测中,黑水凤尾鸡的鸡腿肉中丝氨酸和精氨酸含量均显著高于市售白羽肉鸡(p0.05);黑水凤尾鸡的鸡胸肉中谷氨酸、甘氨酸和丙氨酸含量均显著高于市售白羽肉鸡(p0.05)。同时,在矿物质元素检测中,通过对15种矿物质元素进行主成分分析、聚类分析和判别分析可知,其中Mn、Mo和Cs 3个元素可将这两个品种100%区分开来,从而有效地进行产地溯源。


Study on origin of HeiShui Phoenix chicken based on trace element fingerprint

Abstract: Heishui Phoenix chicken is a national geographical indication product, and White Feather chicken is currently the most commercially available variety. In this study, the chicken breast and chicken leg meat of commercially-available White Feather chicken and Heishui Phoenix chickens were studied. The differences between the nutrients of amino acids and mineral elements were discussed. The results indicated that 17 kinds of amino acids and 15 kinds of mineral elements were detected in both the Heishui Phoenix chicken and the commercial White Feather chicken. In the amino acid test, the contents of serine and arginine in the Heishui Phoenix chicken were significantly higher than that in the commercial White Feather chicken (p<0.05). In the chicken breast, the glutamic acid, glycine and alanine in the Heishui Phoenix chicken were found significantly higher than that of commercially available White Feather chicken (p<0.05). Meanwhile, the detection of mineral elements, principal component analysis, cluster analysis, and discriminant analysis were performed on 15 mineral elements. Three elements of Mn, Mo and Cs can distinguish these two varieties by 100%, in order to conduct an effective origin traceability.
